1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

Juice and zest of 1 lemon

1 teaspoon garlic powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper to taste

4 large lettuce leaves (e.g., Romaine or Butter)

½ cup cherry tomatoes, halved

½ avocado, sliced

¼ cup red onion, thinly sliced

Fresh cilantro or parsley, for garnish

Optional: ¼ cup feta cheese or vegan feta

Instructions
 

Prepare the Chickpeas: In a medium bowl, mash the chickpeas with a fork or a potato masher, leaving some chunks for texture.

    Season the Mixture: Add the olive oil, lemon juice, lemon zest, garlic powder, cumin, smoked paprika, salt, and pepper to the mashed chickpeas. Mix well until all ingredients are combined and evenly distributed.
