Lemon Blueberry Muffin Bites

1 cup fresh blueberries (or frozen, thawed)

1 ½ cups all-purpose flour

½ cup granulated sugar

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 large lemon (zest and juice)

½ cup plain Greek yogurt

¼ cup unsalted butter, melted

2 large eggs

1 tsp vanilla extract

Optional: Lemon glaze (1 cup powdered sugar + 1-2 tbsp lemon juice)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with mini muffin liners.

    Prepare the Berries: If using fresh blueberries, rinse and pat dry. If using frozen, ensure they are thoroughly thawed and drained to prevent excess moisture in the batter.

      Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined. Set aside.

        Mix Wet Ingredients: In a separate bowl, mix the melted butter, Greek yogurt, eggs, vanilla extract, lemon zest, and lemon juice. Whisk until the mixture is smooth and creamy.

          Combine Ingredients: Pour the wet ingredients into the dry ingredients. Gently fold until just combined, being careful not to overmix. The batter should be lumpy. Add the blueberries and fold gently to incorporate.
