Lemon Blueberry Cookies (Soft and Chewy)

2 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened to room temperature

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1 ½ cups fresh blueberries (preferably semi-frozen)

½ cup powdered sugar (for optional dusting)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy (about 3-4 minutes).

        Add Egg and Flavorings: Beat in the egg, followed by the vanilla extract, lemon zest, and lemon juice. Mix until well blended.

          Combine with Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined. Be careful not to overmix.

            Fold in Blueberries: Gently fold in the fresh blueberries using a spatula, trying not to crush them. If using frozen blueberries, do not thaw them to prevent excess moisture.

              Scoop the Cookies: Using a cookie scoop or tablespoon, drop rounded dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

                Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden but the centers are still soft. They will continue to set as they cool.
