Lemon Basil Pesto Pasta

2 cups fresh basil leaves, packed

1/2 cup pine nuts (or walnuts if preferred)

1/2 cup freshly grated Parmesan cheese

2 cloves garlic, minced

1/2 cup extra-virgin olive oil

Juice and zest of 1 large lemon

Salt and freshly ground black pepper, to taste

12 oz pasta (spaghetti, linguine, or your favorite shape)

Cherry tomatoes, halved (for garnish, optional)

Extra basil leaves for garnish (optional)

Instructions
 

Prepare the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Make the Pesto: In a food processor, combine the basil leaves, pine nuts, grated Parmesan, minced garlic, lemon juice, and lemon zest. Pulse until finely chopped.

      Add Olive Oil: With the processor running, slowly pour in the olive oil until the mixture is smooth and well-combined. You may need to scrape down the sides of the bowl to ensure everything is blended evenly.

        Season the Pesto: Taste the pesto and season with salt and freshly ground black pepper as needed. If the pesto is too thick, add a little reserved pasta water until you reach your desired consistency.

          Combine Pasta and Pesto: In a large mixing bowl or the pot you used for boiling, combine the drained pasta with the lemon basil pesto. Toss well to ensure all the pasta is evenly coated. If the pesto is too thick, gradually add more reserved pasta water until the sauce coats the pasta beautifully.

            Serve: Plate the pesto pasta and garnish with halved cherry tomatoes and extra basil leaves if desired. A sprinkle of additional Parmesan can also add a nice touch.
