Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or ground pork)

1/4 cup panko breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons soy sauce

2 tablespoons gochujang (Korean chili paste)

1 tablespoon sesame oil

1 tablespoon honey

1/2 teaspoon black pepper

1/4 teaspoon salt

1 tablespoon sesame seeds (for garnish)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tablespoon gochujang

1 teaspoon rice vinegar

1 teaspoon lime juice

1/2 teaspoon garlic powder

1/4 teaspoon salt

1 teaspoon sriracha (optional for extra heat)

Prepare the Meatball Mixture: In a large mixing bowl, add ground beef, panko breadcrumbs, chopped green onions, minced garlic, grated ginger, soy sauce, gochujang, sesame oil, honey, black pepper, and salt. Mix all ingredients until well combined.

    Shape the Meatballs: Preheat your oven to 400°F (200°C). With wet hands, shape the mixture into small meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.

      Bake the Meatballs: Bake the meatballs in the preheated oven for about 15-20 minutes, or until they are cooked through and browned on the outside. You can flip them halfway through for even cooking.

        Make the Spicy Mayo Dip: While the meatballs are baking, prepare the spicy mayo dip. In a small bowl, whisk together mayonnaise, gochujang, rice vinegar, lime juice, garlic powder, salt, and sriracha (if using). Adjust the spice level to taste.
