1 can (15 oz) of black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup cooked and crumbled bacon (or turkey bacon)

2 cups cooked shredded chicken (optional)

1 cup diced fresh jalapeños (seeds removed for less heat)

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded sharp cheddar cheese

1/2 cup shredded Monterey Jack cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 cup crushed tortilla chips (plus more for topping)

Fresh cilantro, for garnish (optional)

Sliced jalapeños for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Mix the Base: In a large mixing bowl, combine the cream cheese, sour cream, garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper. Use a hand mixer or a spatula to mix until smooth and creamy.

      Add Ingredients: Stir in the black beans, corn, cooked bacon, shredded chicken (if using), diced jalapeños, and half of each type of shredded cheese (sharp cheddar and Monterey Jack) to the cream cheese mixture.

        Prepare the Casserole Dish: Lightly grease a 9x13-inch casserole dish. Spread a layer of crushed tortilla chips on the bottom to add crunch.

          Layer the Casserole: Pour the jalapeño mixture over the tortilla chips and spread evenly with a spatula. Top with the remaining shredded cheeses and a few extra crushed tortilla chips for crunch.
