12 oz rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely sliced

1/2 cup Kalamata olives, pitted and halved

1 cup mozzarella balls, halved (or cubed if using larger cheese)

1/3 cup fresh basil, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Optional: 1/4 cup sun-dried tomatoes, chopped

Instructions
 

Cook the Pasta: Fill a large pot with salted water, bring it to a boil. Add the rotini pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the pasta cooks, wash and cut the cherry tomatoes, cucumber, and red onion as stated in the ingredients. Place them into a large mixing bowl along with the Kalamata olives and mozzarella balls.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust seasoning to taste, depending on your preference.
