Ingredients

2 cups rolled oats

1 cup natural peanut butter (smooth or crunchy)

½ cup honey or maple syrup

½ cup brown sugar (packed)

½ cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

½ teaspoon salt

½ teaspoon cinnamon (optional)

1 cup chocolate chips (semi-sweet or dark, for extra indulgence)

½ cup chopped nuts (e.g., almonds, walnuts, or peanuts), optional

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.

Mix wet ingredients: In a large mixing bowl, combine the peanut butter, honey (or maple syrup), milk, vanilla extract, and brown sugar. Stir until the mixture is smooth and well combined.

Combine dry ingredients: In another bowl, mix the rolled oats, salt, cinnamon (if using), and chopped nuts (if using).

Combine mixtures: Gently fold the dry ingredient mixture into the wet mixture until well combined. Then, add in the chocolate chips and mix until evenly distributed.

Fill muffin tin: Use a spoon or ice cream scoop to fill each muffin cup with the batter, about ¾ full. The mixture can be slightly mounded on top.

Bake: Place the muffin tin in the oven and bake for 15-18 minutes, or until the tops are golden brown and slightly firm to the touch.

Cool: Allow the oat cups to cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely.

Serve and enjoy: Enjoy them warm or let them cool completely before storing them in an airtight container. These oat cups make for a great snack or breakfast option!
