Marinate the Chicken: In a large mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, smoked paprika, salt, and black pepper. Add the chicken thighs and toss until well coated. Let it marinate for at least 30 minutes (or refrigerate for up to 4 hours for deeper flavor).
