Ingredients

2 cups raw cashews

2 tablespoons olive oil

3 tablespoons honey

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon smoked paprika

1 teaspoon sea salt

1/2 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Fresh rosemary (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Cashews: In a large mixing bowl, combine the raw cashews with olive oil. Stir well to coat the cashews evenly.

Make the Hot Honey Mixture: In a small bowl, whisk together the honey, cayenne pepper, smoked paprika, sea salt, black pepper, garlic powder, and onion powder until fully combined.

Combine Ingredients: Pour the hot honey mixture over the cashews and mix thoroughly until the cashews are well-coated.

Spread on Baking Sheet: Transfer the seasoned cashews onto the prepared baking sheet in a single layer, making sure they are not overcrowded.

Roast the Cashews: Place the baking sheet in the preheated oven and roast for 15-20 minutes. Stir the cashews halfway through to ensure they roast evenly. Keep an eye on them as they can quickly go from perfectly roasted to burnt.

Cool and Garnish: Once the cashews are golden and fragrant, remove them from the oven and let them cool on the baking sheet. They will harden as they cool. For an extra touch, sprinkle with finely chopped fresh rosemary immediately after they come out for added flavor and presentation.

Serve or Store: Enjoy the spicy-sweet hot honey roasted cashews warm. If you're not eating them instantly, transfer to an airtight container; they can be stored at room temperature for up to a week.
