1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cayenne pepper (adjust for heat preference)

1 tsp salt

1/2 tsp black pepper

Oil for frying (vegetable or canola)

12 mini buttermilk biscuits (store-bought or homemade)

1/2 cup hot honey (store-bought or homemade)

1/4 cup mayonnaise

1 tbsp lemon juice

1 cup shredded lettuce (optional)

Pickles for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, add the chicken thighs to the buttermilk. Cover and refrigerate for at least 1 hour (or overnight for more flavor).

    Prepare the Coating: In a separate bowl, mix the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

      Heat the Oil: In a deep skillet or frying pan, pour enough oil to submerge half the chicken. Heat the oil over medium heat until it reaches 350°F (175°C).

        Coat the Chicken: Remove chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing lightly to adhere the coating.

          Fry the Chicken: Carefully place the coated chicken in the hot oil, frying in batches if necessary. Fry for about 5–7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove and drain on paper towels.

            Prepare the Biscuit Sliders: If using frozen or refrigerated biscuits, bake according to package instructions until golden brown. If making homemade, prepare and bake your biscuit recipe.

              Make the Sauce: In a small bowl, whisk together the mayonnaise and lemon juice to create a zesty mayo.

                Assemble the Sliders: Slice each biscuit in half. Spread a layer of the zesty mayo on the bottom half, place a fried chicken thigh on top, drizzle generously with hot honey, and top with shredded lettuce and pickles if desired. Finish with the top half of the biscuit.

                  Serve: Arrange the sliders on a platter and serve immediately with extra hot honey on the side for drizzling.
