Ingredients

1 lb large shrimp, peeled and deveined

1 ripe avocado, diced

2 cups mixed greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/4 cup cilantro, chopped

Juice of 2 limes

2 tablespoons honey

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Optional: sliced jalapeños for a spicy kick

Instructions

Marinate the Shrimp: In a medium bowl, whisk together lime juice, honey, olive oil, garlic powder, salt, and pepper. Add the shrimp to the marinade, ensuring they are well-coated. Let them marinate for about 15-20 minutes at room temperature.

Cook the Shrimp: Heat a skillet over medium-high heat. Once hot, add the marinated shrimp and cook for 2-3 minutes on each side or until they turn pink and opaque. Remove from heat and set aside.

Prepare the Salad Base: In a large salad bowl, combine mixed greens, diced avocado, cherry tomatoes, red onion, and chopped cilantro. Toss gently to combine.

Add the Shrimp: Once the shrimp are cooked and slightly cooled, add them to the salad. Toss gently to ensure the shrimp and vegetables are well distributed.

Dress the Salad: Drizzle additional lime juice and olive oil if desired. Adjust salt and pepper to taste. For an extra zing, consider adding sliced jalapeños.

Serve: Divide the salad into individual bowls or plates. Enjoy your vibrant and refreshing Honey Lime Shrimp and Avocado Salad immediately!
