Honey Glazed Salmon Foil Packs

Ingredients
  

4 salmon fillets (6 ounces each)

1/4 cup honey

1/4 cup soy sauce (low sodium preferred)

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 cup snap peas, trimmed

1 red bell pepper, sliced

1 cup corn kernels (fresh, frozen, or canned)

1 tablespoon olive oil

Salt and pepper to taste

Sesame seeds and chopped green onions for garnish

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together honey, soy sauce, Dijon mustard, minced garlic, grated ginger, and sesame oil until well combined. Set aside 2 tablespoons of this marinade in a separate bowl for later use.

    Preheat Oven: Preheat your oven to 400°F (200°C).

      Prepare the Foil: Cut four large pieces of aluminum foil (about 12x18 inches each). Place them on a flat surface and create a small lip around the edges to hold in any juices.

        Season the Salmon: Lay one salmon fillet on the center of each piece of foil. Brush each fillet generously with the marinade, reserving the 2 tablespoons set aside earlier. Season with salt and pepper to taste.

          Add the Vegetables: Divide the snap peas, sliced bell pepper, and corn evenly among the four foil packs, placing the veggies around the salmon.

            Seal the Packs: Drizzle the olive oil over the veggies and salmon in each pack. Carefully fold the edges of the aluminum foil over the salmon and vegetables, sealing them tightly to create a packet.

              Bake: Place the foil packets on a baking sheet and transfer them to the preheated oven. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

                Serve: Carefully open the foil packets (watch out for steam!) and drizzle the reserved marinade over the salmon and vegetables. Sprinkle with sesame seeds and chopped green onions for garnish.
