1 lb (450g) ground chicken

3 tablespoons honey

3 cloves garlic, minced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon fresh ginger, minced

1/2 teaspoon red pepper flakes (optional)

1 cup water chestnuts, diced

1/2 cup green onions, chopped (plus extra for garnish)

1/4 cup fresh cilantro, chopped (for garnish)

1 head of butter or iceberg lettuce, leaves separated

Sesame seeds (for garnish)

Instructions
 

Cook the Chicken: In a large skillet over medium heat, add the ground chicken. Cook until browned and cooked through, breaking it apart with a spatula, about 5–7 minutes.

    Prepare the Sauce: In a small bowl, whisk together the honey, minced garlic, soy sauce, rice vinegar, sesame oil, fresh ginger, and red pepper flakes. Set aside.

      Combine Ingredients: Once the chicken is cooked, drain any excess fat and return the skillet to the heat. Add the diced water chestnuts and pour the honey garlic sauce over the chicken. Stir well to combine.

        Simmer: Allow the mixture to simmer for about 3–5 minutes, stirring occasionally until the sauce thickens slightly and coats the chicken evenly.

          Mix in Green Onions: Stir in the chopped green onions, reserving a few for garnish. Remove from heat.

            Prepare Lettuce Cups: To assemble, take a lettuce leaf and spoon a generous amount of the chicken mixture into the center.

              Garnish and Serve: Top with extra green onions, cilantro, and sesame seeds. Repeat with remaining lettuce leaves. Serve immediately with extra honey garlic sauce on the side if desired.
