Ingredients

1.5 lbs chicken thighs (boneless, skinless)

1/4 cup honey

1/4 cup soy sauce (low-sodium preferred)

3 cloves garlic (minced)

1 tablespoon fresh ginger (grated)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (optional for a kick)

2 tablespoons olive oil

1/4 teaspoon black pepper

Sesame seeds (for garnish)

Chopped green onions (for garnish)

Instructions

Marinate the Chicken: In a medium bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, red pepper flakes, and black pepper. Add the chicken thighs to the bowl, ensuring they’re fully coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Heat the Olive Oil: In a large skillet over medium-high heat, add the olive oil. Once hot, remove the chicken from the marinade, allowing any excess to drip off (reserve the marinade for later).

Brown the Chicken: Place the chicken thighs in the skillet and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through (the internal temperature should reach 165°F).

Make the Sauce: Once the chicken is cooked, remove the thighs from the skillet and set aside. Pour the reserved marinade into the skillet. Bring it to a boil, then reduce the heat to a simmer. Let it simmer for about 5 minutes until slightly thickened.

Coat the Chicken: Return the chicken thighs to the skillet, tossing them in the thickened sauce until well coated. Let them cook for an additional 2-3 minutes to absorb all the flavors.

Serve: Transfer the chicken to a serving dish, drizzle any remaining sauce from the skillet over the top. Garnish with sesame seeds and chopped green onions.

Enjoy: Serve hot with steamed rice or quinoa, and a side of sautéed vegetables for a complete meal!
