1 pound baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons unsalted butter

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Carrots: If using regular carrots, peel and cut them into even-sized sticks, about 2-3 inches long. This ensures they cook evenly.

      Make the Honey Garlic Butter: In a small saucepan over low heat, add the butter and honey. Stir until melted and combined. Add the minced garlic and thyme. Cook for an additional 1-2 minutes, just until the garlic is fragrant but not browned. Remove from heat and set aside.

        Toss the Carrots: Place the prepared carrots in a large mixing bowl. Pour the honey garlic butter over the carrots and toss well to ensure they are evenly coated. Season with salt and pepper.

          Roast the Carrots: Spread the coated carrots in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.

            Garnish and Serve: Once the carrots are roasted to perfection, remove them from the oven. Transfer to a serving dish and garnish with freshly chopped parsley. Drizzle any remaining honey garlic butter from the baking sheet over the top for extra flavor.
