1 can (15 oz) chickpeas, rinsed and drained

1 medium red bell pepper, diced

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for a kick

Prepare the Vegetables: In a large mixing bowl, combine the rinsed chickpeas, diced red bell pepper, chopped cucumber, halved cherry tomatoes, finely chopped red onion, and fresh parsley. Toss the ingredients lightly to mix them evenly.
