1.5 lbs Brussels sprouts, halved

3 tablespoons olive oil

Salt and pepper, to taste

1/4 cup balsamic vinegar

1/4 cup honey

2 cloves garlic, minced

1 tablespoon Dijon mustard

1/4 teaspoon red pepper flakes (optional)

1/4 cup crumbled feta cheese (for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Brussels Sprouts: In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until evenly coated.

      Roast the Brussels Sprouts: Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the oven for about 20-25 minutes, or until they are golden brown and crispy on the edges. Stir halfway through for even cooking.

        Make the Glaze: While the Brussels sprouts are roasting, combine balsamic vinegar, honey, garlic, Dijon mustard, and red pepper flakes (if using) in a small saucepan. Bring to a gentle boil over medium heat, then reduce the heat and let it simmer for about 5-7 minutes, or until slightly thickened.

          Glaze the Brussels Sprouts: Remove the roasted Brussels sprouts from the oven and drizzle the honey balsamic glaze over them, tossing to coat well.

            Serve: Transfer the glazed Brussels sprouts to a serving platter. Top with crumbled feta cheese and chopped fresh parsley for a burst of flavor.
