1 lb beef sirloin, thinly sliced against the grain

3 tablespoons hoisin sauce

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

2 tablespoons vegetable oil (for stir-frying)

3 cloves garlic, minced

1-inch piece of fresh ginger, grated

1 red bell pepper, julienned

1 cup snow peas or sugar snap peas

4 green onions, sliced

1 tablespoon sesame seeds (for garnish)

Fresh cilantro (for garnish, optional)

Lime wedges (for serving)

Instructions
 

Prepare the Noodles:

    Cook the rice noodles according to the package instructions. Drain and rinse under cold water to prevent sticking. Set aside.

      Marinate the Beef:

        In a bowl, combine the sliced beef with 1 tablespoon of hoisin sauce, soy sauce, and sesame oil. Allow it to marinate for about 15-20 minutes while you prepare the other ingredients.

          Make the Sauce:

            In a small bowl, mix together the remaining hoisin sauce, oyster sauce, and an additional splash of soy sauce. Set this sauce aside.

              Stir-Fry the Beef:

                Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for about 2-3 minutes until just browned. Remove the beef from the pan and set aside.

                  Sauté the Vegetables:

                    In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic and grated ginger, stirring for about 30 seconds until fragrant. Follow with the red bell pepper and snow peas. Stir-fry for an additional 2-3 minutes, ensuring the veggies remain crisp.

                      Combine Everything:

                        Return the cooked beef to the skillet with the veggies. Add the cooked noodles and the sauce mixture. Toss everything together over medium heat for about 1-2 minutes, until heated through and well combined.

                          Serve:
