3 cups cooked jasmine rice (preferably day-old)

2 tablespoons vegetable oil

1 tablespoon sesame oil

2 large eggs, beaten

1 cup mixed vegetables (carrots, peas, and corn)

4 green onions, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce

1 tablespoon teriyaki sauce (optional)

Salt and pepper to taste

Sesame seeds (for garnish)

Optional protein: 1 cup grilled chicken, shrimp, or steak, diced

Instructions
 

Prep the Rice: If you don't have day-old rice, cook jasmine rice according to package instructions and spread it on a baking sheet to cool. This helps prevent clumping.

    Cook the Eggs: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Pour in the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set aside.

      Stir-Fry the Veggies: In the same skillet, add the remaining tablespoon of vegetable oil and sesame oil. Add minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.

        Add Mixed Vegetables: Stir in the mixed vegetables and cook for 2-3 minutes until they are heated through. If you’re using optional protein like chicken or shrimp, toss it in now to warm up as well.

          Combine with Rice: Add the cooked rice to the skillet, breaking apart any clumps. Mix everything thoroughly, ensuring the rice is evenly coated with the oil and veggies.

            Season: Drizzle the soy sauce and teriyaki sauce (if using) over the rice and stir well to combine. Season with salt and pepper to taste.

              Finish with Green Onions: Fold in the scrambled eggs and chopped green onions, mixing until everything is heated through and well-combined.
