Herbed Ricotta Zucchini Rollatini

3 medium zucchinis

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 large egg

2 tablespoons fresh basil, chopped

2 tablespoons fresh parsley, chopped

1 tablespoon olive oil

2 cloves garlic, minced

1 cup marinara sauce (store-bought or homemade)

Salt and pepper, to taste

Pinch of red pepper flakes (optional)

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Using a mandoline or a sharp knife, slice the zucchini lengthwise into thin strips (about 1/8 inch thick). If the zucchini is particularly watery, sprinkle the slices with salt and let them sit for 15 minutes, then pat dry with a paper towel.

    Make the Filling: In a mixing bowl, combine ricotta cheese, grated Parmesan, half of the mozzarella, egg, fresh basil, parsley, minced garlic, and a pinch of salt and pepper. Mix until well combined and set aside.

      Sauté the Zucchini Strips: In a large skillet, heat the olive oil over medium heat. Gently sauté the zucchini strips for about 2-3 minutes per side until slightly softened. Remove from heat and allow to cool slightly.

        Assemble the Rollatini: On a clean, flat surface, lay down one zucchini strip. Place about 2 tablespoons of the ricotta filling at one end of the strip and carefully roll it up. Place the roll seam-side down in a greased baking dish. Repeat this process with the remaining zucchini strips and filling.

          Add Sauce and Cheese: Once all the rollatini are in the dish, pour the marinara sauce over the top, making sure to cover each roll. Sprinkle the remaining mozzarella cheese over the marinara.

            Bake the Rollatini: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

              Serve: Once baked, let the dish cool for a few minutes before serving. Garnish with extra fresh herbs and a sprinkle of red pepper flakes for added flavor.
