4 large bell peppers (any color)

1 cup crumbled feta cheese

1 cup cooked quinoa (or rice)

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/2 tsp dried oregano

1/2 tsp black pepper

1/4 tsp salt (adjust to taste)

1/4 cup olive oil

Juice of 1 lemon

Optional: 1/4 cup pine nuts, toasted (for crunch)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outsides with olive oil and place them cut side up in a baking dish.

      Make the Filling: In a large mixing bowl, combine the crumbled feta cheese, cooked quinoa, cherry tomatoes, red onion, garlic, parsley, basil, oregano, black pepper, salt, olive oil, and lemon juice. Stir until well mixed. If using pine nuts, fold them in gently.

        Stuff the Peppers: Generously fill each bell pepper with the herbed feta mixture, pressing it down lightly to make sure it fits well.

          Bake the Peppers: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes, or until the peppers are tender and the tops are slightly golden.

            Serve: Once out of the oven, allow them to cool for a few minutes. Serve warm as a delightful appetizer or a nutritious main dish. Garnish with additional chopped herbs if desired.
