Ingredients

4 salmon fillets (6 oz each)

1/2 cup unsalted butter, softened

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

2 tablespoons fresh dill, chopped

1 tablespoon fresh lemon juice

Zest of 1 lemon

Salt and pepper, to taste

1 large zucchini, sliced into rounds

1 cup cherry tomatoes, halved

Lemon slices for garnish

Aluminum foil

Instructions

Preparation of the Herb Garlic Butter: In a mixing bowl, combine the softened butter, minced garlic, chopped parsley, chopped dill, lemon juice, lemon zest, salt, and pepper. Mix until well blended and creamy.

Prepare the Foil: Cut four large pieces of aluminum foil, each about 12 inches long. Layer two pieces of foil on top of each other for each packet to ensure no leaking.

Assemble the Salmon Packets: Place a salmon fillet in the center of each foil piece. Season each fillet with a pinch of salt and pepper. Divide the herb garlic butter mixture evenly among the salmon fillets, spreading it generously on top.

Add Vegetables: Around each salmon fillet, add an equal portion of zucchini rounds and cherry tomato halves. Drizzle a little olive oil over the vegetables and season with salt and pepper.

Seal the Foil Packets: Fold the sides of the foil over the salmon and vegetables, then roll the ends tightly to seal in the flavor and juices. Make sure each packet is well sealed.

Cooking Time: Preheat your grill or oven to 375°F (190°C). Place the foil packets on the grill or in the oven and cook for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve: Carefully unwrap the foil packets (steam will escape), garnish with fresh lemon slices, and serve immediately. Enjoy your flavorful Herb Garlic Butter Salmon with the delicious roasted vegetables!
