Ingredients

4 large ripe bananas, sliced

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 cup brown sugar

1/2 teaspoon ground cinnamon

1 cup rolled oats

1/2 cup all-purpose flour

1/4 cup melted butter or coconut oil

1/4 cup chopped nuts (walnuts or pecans)

1/2 cup granulated sugar

Pinch of salt

Optional: Vanilla ice cream for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and prepare a 9x9-inch baking dish by lightly greasing it.

Prepare the Bananas: In a medium bowl, toss the sliced bananas with lemon juice, vanilla extract, brown sugar, and ground cinnamon until the bananas are evenly coated. Layer this mixture evenly in the bottom of the prepared baking dish.

Make the Crumble Topping: In a separate bowl, combine the rolled oats, all-purpose flour, melted butter or coconut oil, chopped nuts, granulated sugar, and a pinch of salt. Mix until crumbly and all ingredients are well incorporated.

Assemble the Crumble: Evenly sprinkle the crumble topping over the banana layer in the baking dish.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and the bananas are bubbling.

Cool and Serve: Remove from the oven and let it cool for about 10 minutes. Serve warm with a scoop of vanilla ice cream if desired.
