Ingredients

2 medium sweet potatoes, peeled and diced

3 large carrots, sliced

2 stalks celery, chopped

1 medium onion, diced

3 cloves garlic, minced

1 zucchini, diced

1 red bell pepper, chopped

1 cup butternut squash, peeled and cubed

1 can (15 oz) chickpeas, drained and rinsed

4 cups vegetable broth

1 can (14.5 oz) diced tomatoes, undrained

2 teaspoons dried thyme

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

2 cups fresh spinach or kale (added at the end)

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions

Prepare the Vegetables: Start by peeling and chopping all the vegetables. Ensure even sizes for consistent cooking.

Sauté Aromatics: In a skillet, heat the olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Then stir in minced garlic and sauté for an additional minute until fragrant. (This step enhances the flavors you’re going to build!)

Layer Ingredients in Crockpot: In your crockpot, layer the sweet potatoes, carrots, celery, zucchini, red bell pepper, and butternut squash. Add the chickpeas on top.

Add Liquids and Spices: Pour in the vegetable broth and diced tomatoes, then sprinkle in the thyme, smoked paprika, and cumin. Season with salt and pepper to taste. Stir everything together gently to combine.

Cook: Cover your crockpot and set it on low for 6-8 hours or high for 3-4 hours, until all the vegetables are tender.

Incorporate Greens: About 30 minutes before serving, add the fresh spinach or kale, stirring it in until wilted.

Serve: Ladle the hearty stew into bowls and garnish with freshly chopped parsley, if desired. Enjoy this warm and nourishing dish with crusty bread for a complete fall meal!
