1 cup canned pumpkin puree

1/2 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups whole wheat flour

1/2 cup vanilla or unflavored protein powder

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup dark chocolate chips (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it to prevent sticking.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, Greek yogurt, honey (or maple syrup), eggs, and vanilla extract. Whisk everything together until smooth and well-blended.

      Combine Dry Ingredients: In a separate bowl, mix together the whole wheat flour, protein powder, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.

        Combine Mixtures: Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.

          Add Nuts and Chocolate: If desired, fold in the chopped walnuts or pecans and dark chocolate chips for added texture and flavor.
