4 medium-sized zucchinis

1 cup cooked quinoa (any color)

1 cup cherry tomatoes, halved

1 bell pepper, diced (red, yellow, or green)

½ cup black beans, rinsed and drained

½ cup corn (fresh or frozen)

½ teaspoon cumin

½ teaspoon paprika

Salt and pepper to taste

½ cup shredded mozzarella cheese (or dairy-free cheese)

Fresh cilantro or parsley for garnishing

Olive oil for drizzling

Juice of 1 lime

Preheat the Oven: Preheat your oven to 375°F (190°C).
