1 cup grated zucchini (about 1 medium zucchini)

1/2 cup whole wheat flour

1/2 cup almond flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup honey or maple syrup

1/2 cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (optional: for an extra chocolatey kick)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin pan with paper liners or lightly grease it with non-stick spray.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Squeeze out excess moisture using a clean kitchen towel or paper towels. Set aside.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the whole wheat flour, almond flour, cocoa powder, baking soda, baking powder, and salt until well combined.

        Mix Wet Ingredients: In another mixing bowl, combine the honey (or maple syrup), applesauce, eggs, and vanilla extract. Whisk until the mixture is smooth and well incorporated.

          Combine Ingredients: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix. Fold in the grated zucchini and dark chocolate chips, if using.

            Fill Muffin Liners: Spoon the batter evenly into the prepared muffin pan, filling each liner about 2/3 full.
