Ingredients

2 ripe bananas, mashed

1/2 cup unsweetened applesauce

1/4 cup honey or maple syrup

1 large egg

1 teaspoon vanilla extract

1 cup whole wheat flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup chopped walnuts (or nuts of your choice)

1/4 cup dark chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or lightly grease it.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, applesauce, honey (or maple syrup), egg, and vanilla extract. Mix until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and cinnamon until evenly mixed.

Combine Both Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix!

Fold in Nuts and Optional Chocolate: Gently fold in the chopped walnuts and dark chocolate chips if using, ensuring they are evenly distributed throughout the batter.

Fill Muffin Tin: Using a spoon or a small ice cream scoop, distribute the batter evenly among the mini muffin cups, filling each about 2/3 full.

Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.

Cool and Serve: Remove from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy your healthy banana nut muffin bites either warm or at room temperature!
