2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond flour (or any flour of your choice)

1/4 cup unsweetened cocoa powder

1/4 cup honey or maple syrup

1/4 cup dark chocolate chips (preferably 70% cacao)

1/2 teaspoon baking powder

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon cinnamon (optional)

1/4 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the mashed bananas and honey (or maple syrup). Stir until smooth and well combined.

      Add in the rolled oats, almond flour, cocoa powder, baking powder, vanilla extract, salt, and cinnamon (if using). Stir until the mixture is thoroughly combined and forms a dough-like consistency.

        Fold in the chocolate chips and chopped nuts (if desired) until evenly distributed throughout the dough.

          Using a tablespoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

            Flatten each cookie slightly with the back of a spoon to create even cookies, as they won't spread much during baking.

              Bake in the preheated oven for 10-12 minutes or until the edges are firm. The cookies will appear soft but will harden as they cool.

                Remove from the oven and let cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
