Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup fresh pineapple chunks (or canned pineapple, drained)

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 medium red onion, cut into 1-inch pieces

1/4 cup soy sauce

2 tbsp brown sugar

1 tbsp sesame oil

2 cloves garlic, minced

1 tsp fresh ginger, grated

1 tsp crushed red pepper flakes (optional, for heat)

Juice of 1 lime

Salt and pepper to taste

Skewers (soaked in water if wooden)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, crushed red pepper flakes (if using), lime juice, salt, and pepper. This sweet and tangy marinade will amplify the flavors of the chicken and veggies.

Marinate the Chicken: Place the cubed chicken in a large zip-top bag or a shallow dish, then pour the marinade over it. Ensure the chicken is well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

Prep the Skewers: While the chicken marinates, prepare your vegetables. Cut the red and green bell peppers and red onion into 1-inch pieces to match the size of your chicken cubes. Also, prepare the pineapple chunks.

Assemble the Kebabs: Once the chicken is marinated, thread the chicken cubes, pineapple chunks, and vegetable pieces onto the skewers, alternating between ingredients. This adds visual appeal and flavor!

Grill the Kebabs: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally until the chicken is cooked through (165°F or 75°C internal temperature) and has grill marks, and the vegetables are slightly charred.

Serve: Once cooked, remove the kebabs from the grill and let them rest for a few minutes. Serve the Hawaiian Pineapple Chicken Kebabs warm, optionally garnished with lime wedges and fresh cilantro.
