4 slices of sourdough bread

1 cup shredded sharp cheddar cheese

1 cup shredded pepper jack cheese

1-2 Hatch green chiles (roasted, peeled, and chopped)

1/2 cup fresh spinach, roughly chopped

1/2 medium red bell pepper, diced

1/4 cup red onion, thinly sliced

2 tablespoons butter (for grilling)

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Prepare the Ingredients: If you haven't done so already, roast and peel the Hatch green chiles, then chop them into small pieces. Set aside.

    Mix the Filling: In a medium bowl, combine the shredded cheddar cheese, pepper jack cheese, chopped green chiles, fresh spinach, diced red bell pepper, and red onion. Add the garlic powder, smoked paprika, salt, and pepper. Mix well to combine all ingredients evenly.

      Assemble the Sandwiches: Take two slices of sourdough bread and place a generous amount of the cheese and veggie mixture on each slice. Top with the remaining two slices of sourdough to create two sandwiches.

        Butter the Bread: Spread about 1 tablespoon of butter on the outer side of each sandwich. Ensure the bread is coated evenly with butter for a golden, crispy finish.
