Hatch Chili Egg Burrito Bites

6 large eggs

1/2 cup milk (or cream for richness)

1 cup shredded cheddar cheese

1 cup diced Hatch green chilies (fresh or roasted)

1/4 cup chopped fresh cilantro

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

8 small flour tortillas

Olive oil or cooking spray, for greasing

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a mini muffin tin with olive oil or cooking spray to prevent the burrito bites from sticking.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk until smooth. Add in the garlic powder, onion powder, salt, and pepper. Mix well.

      Add the Good Stuff: Stir in the shredded cheddar cheese, diced Hatch green chilies, and chopped cilantro into the egg mixture, ensuring everything is well combined.

        Assemble the Burrito Bites: Cut the small flour tortillas into circles using a cookie cutter or a glass (about 4 inches in diameter). Carefully press each tortilla circle into the greased muffin tin, forming a small cup.

          Fill the Cups: Pour the egg mixture into each tortilla cup, filling each one about three-quarters full.
