1 cup cornmeal

1 cup all-purpose flour

½ cup sugar

1 tablespoon baking powder

½ teaspoon salt

1 cup milk

2 large eggs

⅓ cup vegetable oil

1 cup fresh Hatch green chiles, roasted, peeled, and diced (about 4-5 chiles)

1 cup shredded sharp cheddar cheese

1 cup corn kernels (fresh, frozen, or canned)

½ teaspoon smoked paprika (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish or skillet with non-stick spray or butter.

    Mix Dry Ingredients: In a large bowl, whisk together cornmeal, flour, sugar, baking powder, salt, and smoked paprika (if using).

      Combine Wet Ingredients: In another bowl, whisk together milk, eggs, and vegetable oil until well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

          Add the Good Stuff: Fold in the diced Hatch chiles, shredded cheese, and corn. Ensure that they are evenly distributed throughout the batter.
