Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup chilled unsalted butter, cut into cubes

1 cup shredded sharp cheddar cheese

1 cup diced roasted Hatch green chiles (fresh or canned, drained)

3/4 cup buttermilk (plus more for brushing)

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1 egg (for egg wash)

Optional: fresh cilantro or green onions for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and garlic powder.

Cut in Butter: Add the chilled butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining.

Add Cheese and Chiles: Stir in the shredded cheddar cheese and diced Hatch chiles until evenly distributed throughout the flour mixture.

Combine Wet Ingredients: Pour in the buttermilk and gently fold the mixture together with a spatula or wooden spoon until just combined. Be careful not to overmix; the dough should be slightly sticky but manageable.

Shape the Biscuits: Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1 inch thick. Cut out biscuits using a floured biscuit cutter or a drinking glass, and place them on the prepared baking sheet. Gather any scraps, re-press, and cut until the dough is used up.

Egg Wash: In a small bowl, beat the egg with a splash of water. Brush the tops of the biscuits with this mixture for a golden finish.

Bake: Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown and cooked through.

Serve Warm: Remove biscuits from the oven and let them cool slightly on a wire rack. Serve warm, optionally garnished with fresh cilantro or green onions.

Enjoy: These delightful Hatch Chili Cheddar Biscuit Melts are perfect for breakfast, brunch, or as a savory snack with your favorite dipping sauce!
