1 (30 oz) bag frozen hashbrowns

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup sour cream

1 can (10.5 oz) cream of chicken soup

1 cup shredded cheddar cheese (divided into ¾ cup and ¼ cup)

1 cup frozen mixed vegetables (peas and carrots work well)

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon black pepper

¼ teaspoon paprika

1 cup milk

2 tablespoons olive oil or melted butter

Salt to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish with olive oil or butter.

    Mix the Base Ingredients: In a large mixing bowl, combine sour cream, cream of chicken soup, milk, garlic powder, onion powder, black pepper, paprika, and salt. Stir well until fully blended.

      Combine Chicken and Veggies: Fold in the shredded chicken, frozen mixed vegetables, and ¾ cup of shredded cheddar cheese into the soup mixture until evenly coated.

        Layer the Hashbrowns: Spread ½ of the frozen hashbrowns evenly across the bottom of the prepared casserole dish.

          Add the Chicken Mixture: Pour the chicken and vegetable mixture over the hashbrowns and distribute it evenly.

            Top with Remaining Hashbrowns: Spread the remaining hashbrowns on top of the chicken layer.

              Add Cheddar Cheese: Top the casserole with the remaining ¼ cup of cheddar cheese for that cheesy goodness.

                Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
