Hamburger Supreme Casserole

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) diced tomatoes, drained

1 can (8 oz) tomato sauce

1 cup corn kernels (fresh, frozen, or canned)

1 tsp chili powder

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

2 cups cooked pasta (elbow macaroni or rotini)

1 1/2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

1/4 cup sour cream

1/4 cup chopped fresh parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet, over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess grease.

      Sauté Veggies: Add the diced onion, garlic, and bell pepper to the skillet. Cook until the vegetables are tender, about 3-4 minutes.

        Mix Ingredients: Stir in the drained diced tomatoes, tomato sauce, corn, chili powder, Italian seasoning, salt, and black pepper. Cook until heated through.

          Combine with Pasta: In a large mixing bowl, combine the cooked pasta and the beef mixture. Mix thoroughly to ensure the pasta is well coated with the sauce.

            Add Cheeses: Stir in 1 cup of cheddar cheese, 1/2 cup of mozzarella cheese, and sour cream until evenly distributed.

              Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.

                Top with Cheese: Sprinkle the remaining cheddar (1/2 cup) and mozzarella (1/2 cup) cheeses evenly over the top.

                  Bake: Cover with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                    Garnish and Serve: Carefully remove the casserole from the oven. Let it cool for a few minutes, then garnish with chopped fresh parsley before serving.
