Prepare the Egg Mixture: In a medium bowl, crack the eggs and whisk them together. Season with salt and pepper to taste.

    Cook the Ham: In a skillet over medium heat, add 1 tablespoon of olive oil. Once heated, add the diced ham and cook for about 3-4 minutes until it is warmed through and slightly browned.

      Scramble the Eggs: Push the ham to one side of the skillet. Add the remaining tablespoon of olive oil to the other side and pour in the whisked eggs. Let them sit for a few seconds before stirring. Scramble the eggs with the ham mixture until fully cooked and fluffy, roughly 3-5 minutes.

        Assemble the Rollups: Lay out the tortillas on a flat surface. Divide the egg and ham mixture evenly among the tortillas. Sprinkle a generous amount of shredded cheddar cheese on top of the filling.
