Ingredients

1 cup natural creamy peanut butter (no added sugars or oils)

1/2 cup honey or maple syrup

1 cup rolled oats (gluten-free if needed)

1/2 cup almond flour (or oat flour)

1/4 cup unsweetened cocoa powder

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup dark chocolate chips or chunks (optional, for topping)

1/4 cup chopped nuts or seeds (optional for added crunch)

Instructions

Prepare the baking pan: Line an 8x8 inch baking dish with parchment paper, allowing some paper to hang over the edges for easy removal later.

Mix dry ingredients: In a large mixing bowl, combine the rolled oats, almond flour, cocoa powder, and sea salt. Stir well to ensure they are evenly mixed.

Combine wet ingredients: In a separate bowl, whisk together the natural peanut butter, honey (or maple syrup), and vanilla extract until smooth and well combined.

Combine mixtures: Pour the wet mixture into the dry mixture. Stir with a spatula or wooden spoon until just combined and a thick dough forms.

Add-ins: If using, fold in the dark chocolate chips and chopped nuts for extra flavor and texture.

Transfer to the pan: Pour the mixture into the prepared baking dish, and using a spatula, press it down evenly into the corners and smooth the top.

Chill the bars: Place the pan in the refrigerator for at least 1-2 hours to set. This helps the bars firm up for easier cutting.

Cut and serve: Once set, lift the bars out of the pan using the parchment overhang. Cut into squares or rectangles as desired. Enjoy immediately or store in an airtight container in the fridge.

Optional: For an even richer flavor, you can melt some additional dark chocolate chips and drizzle over the top before cutting!
