1 cup medjool dates, pitted

1 cup raw almonds (or any nuts of your choice)

1/4 cup unsweetened cocoa powder

2 tablespoons coconut oil, melted

1/4 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup unsweetened shredded coconut (for rolling)

1/4 cup chia seeds (for rolling, optional)

1-2 tablespoons water (if needed)

Instructions
 

Prepare the Dates: If your dates are not soft, soak them in warm water for about 10 minutes. Drain and pat dry.

    Blend the Base: In a food processor, combine the pitted medjool dates and raw almonds. Pulse until the mixture becomes a sticky, crumbly consistency. Scrape down the sides as needed.

      Add Flavor: Add the unsweetened cocoa powder, melted coconut oil, vanilla extract, and sea salt to the food processor. Process again until fully combined. If the mixture feels too dry, you can add a tablespoon or two of water to help it bind together.

        Form the Balls: With wet hands (to prevent sticking), take small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter.

          Coat the Balls: In a shallow bowl, mix the unsweetened shredded coconut and chia seeds (if using). Roll each ball generously in the mixture until well coated.
