2 medium zucchinis

1 tablespoon olive oil

Salt and pepper, to taste

1 large ball of fresh mozzarella cheese, sliced

2 medium ripe tomatoes, sliced

Fresh basil leaves

Balsamic glaze, for drizzling

Optional: Black pepper and crushed red pepper flakes for seasoning

Prep the Zucchini: Start by washing the zucchinis. Cut the ends off and slice them into ½-inch thick rounds or long planks, depending on your preference.

    Marinate the Zucchini: Place the zucchini slices in a bowl and drizzle with olive oil. Season generously with salt and pepper, tossing to ensure all slices are evenly coated.

      Grill the Zucchini: Preheat your grill or grill pan over medium-high heat. Once hot, add the zucchini slices in a single layer. Grill for about 3-4 minutes on each side, until they have nice grill marks and are tender but still firm. Remove from the grill and set aside to cool slightly.
