Grilled Zucchini Caprese Salad

2 medium zucchinis, sliced into 1/4-inch rounds

1 tablespoon olive oil

1 teaspoon balsamic vinegar

Salt and black pepper to taste

1 cup cherry tomatoes, halved

8 ounces fresh mozzarella cheese, diced or mini mozzarella balls

1/4 cup fresh basil leaves, torn or whole

1 tablespoon honey (optional, for sweetness)

1 tablespoon balsamic glaze for drizzling (optional)

Instructions
 

Preheat the Grill: Bring your grill to medium heat (about 350°F to 400°F).

    Prepare the Zucchini: In a bowl, toss the sliced zucchini with olive oil, balsamic vinegar, salt, and black pepper until evenly coated.

      Grill the Zucchini: Place the zucchini slices on the grill in a single layer. Grill for about 3-4 minutes on each side, or until they are tender and have nice grill marks. Remove from the grill and set aside to cool slightly.

        Combine the Salad Ingredients: In a large serving bowl, combine the grilled zucchini, cherry tomatoes, mozzarella cheese, and fresh basil. If using honey, drizzle it over the mixture for added sweetness.
