1 medium zucchini, sliced into rounds

1 medium yellow squash, sliced into rounds

1 red bell pepper, diced

1 yellow bell pepper, diced

1 cup cherry tomatoes, halved

1 red onion, sliced into wedges

3 tablespoons olive oil

1 tablespoon balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Aluminum foil (for packets)

Instructions
 

Prepare Your Grill: Preheat your grill to medium-high heat (about 375°F to 400°F).

    Mix the Veggies: In a large bowl, combine the zucchini, yellow squash, bell peppers, cherry tomatoes, and red onion.

      Create the Marinade: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, oregano, thyme, salt, and pepper.

        Combine: Drizzle the marinade over the mixed vegetables and toss gently until all the veggies are evenly coated.

          Make the Packets: Tear off four large pieces of aluminum foil (about 12x12 inches each). Place an equal portion of the marinated veggies in the center of each piece of foil.

            Seal the Packets: Fold the sides of the foil over the veggies, then fold the top and bottom to create a tightly sealed packet. Ensure there are no gaps.

              Grill the Packets: Carefully place the veggie packets on the grill. Cook for about 15-20 minutes, flipping halfway through, until the vegetables are tender and slightly charred.

                Serve: Remove the packets from the grill, open them carefully (watch for steam), and serve immediately either as a side dish or over cooked rice or quinoa for a heartier meal.
