2 whole grain tortillas

1 medium zucchini, sliced into thin rounds

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 small red onion, thinly sliced

1 cup cherry tomatoes, halved

2 tablespoons olive oil

Salt and black pepper, to taste

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 cup hummus (store-bought or homemade)

Fresh spinach or arugula (optional, for added freshness)

Feta cheese or crumbled goat cheese (optional, for extra flavor)

Instructions
 

Prepare the Vegetables: In a large mixing bowl, combine the zucchini, red and yellow bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil, and season with salt, black pepper, smoked paprika, and garlic powder. Toss until all vegetables are evenly coated.

    Grill the Veggies: Preheat the grill or a grill pan over medium-high heat. Once hot, add the seasoned veggies in a single layer. Grill for 4-5 minutes on each side, or until they are tender and have nice grill marks. Remove from heat and let cool slightly.

      Assemble the Wraps: On each tortilla, spread about half a cup of hummus evenly over the surface, leaving a small border around the edges. Layer the grilled veggies across the center of the hummus. If using, add a handful of fresh spinach or arugula, and sprinkle with feta or goat cheese.

        Wrap it Up: Carefully fold the sides of the tortilla inward and then roll it up from the bottom to the top, securing all the filling inside. Repeat with the second tortilla.

          Serve: You can cut the wraps in half for easier eating. Serve immediately, or wrap them in foil for a delicious on-the-go lunch.
