Ingredients

4 slices of whole grain bread

4 slices of cheddar cheese

1/2 cup shredded cooked chicken (or your protein of choice)

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

2 tablespoons butter, softened

Optional: lettuce and tomato slices for added crunch

Instructions

Prepare the Spread: In a small bowl, mix together the mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper until well combined. Set aside.

Assemble the Sandwich: Take two slices of whole grain bread. Spread a layer of the prepared sauce on both slices. On one slice, layer two pieces of cheddar cheese, the shredded cooked chicken, and add optional lettuce and tomato slices for extra flavor. Top with another slice of cheddar cheese and the second slice of sauced bread to complete the sandwich.

Butter the Bread: Spread the softened butter on the outer sides of the sandwich for that crispy golden finish when grilling.

Heat the Grill: Preheat a non-stick skillet or a grill pan over medium heat.

Grill the Sandwich: Place the sandwich in the skillet. Cook for about 3-4 minutes until the bottom is golden brown. Carefully flip the sandwich and press down gently with a spatula, cooking for another 3-4 minutes on the other side until the cheese is melted and the bread is crispy.

Serve: Remove from the skillet, cut in half, and allow to cool slightly. Serve warm with your favorite side such as carrot sticks, apple slices, or a small salad. Enjoy your delicious Grilled School Lunch Sandwich Melt!
