Ingredients

For the Grilled Salmon:

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Juice of 1 lemon

For the Peach Salsa:

2 ripe peaches, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (adjust for spice level)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Instructions

Prep the Salmon: In a small bowl, mix the olive oil, garlic powder, smoked paprika, salt, and pepper. Brush this marinade evenly over the salmon fillets and let them sit for 15-20 minutes to absorb the flavors.

Make the Peach Salsa: In a medium bowl, combine the diced peaches, chopped red onion, minced jalapeño, cilantro, lime juice, and a pinch of salt. Gently mix until well combined. Set aside to allow the flavors to meld.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If using a grill pan indoors, preheat it on medium heat.

Grill the Salmon: Once the grill is hot, place the marinated salmon fillets skin-side down on the grill. Cook for about 4-6 minutes on the first side without moving them. Flip carefully and cook for an additional 3-5 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve: Remove the salmon from the grill and let it rest for a few minutes. Serve the grilled salmon topped with a generous helping of peach salsa. Garnish with additional cilantro if desired.

Enjoy: Pair with a side of quinoa or a fresh green salad for a complete meal. Savor the delicious flavors of summer!
