Ingredients

4 ripe peaches, halved and pitted

8 oz burrata cheese

4 cups mixed greens (arugula, spinach, and baby kale)

1/4 cup balsamic glaze

1/4 cup extra-virgin olive oil

1/2 cup toasted walnuts, roughly chopped

1/4 cup fresh basil leaves, torn

Salt and freshly cracked black pepper, to taste

Instructions

Preheat the Grill: Warm your grill to medium-high heat (about 400°F or 200°C).

Prepare the Peaches: Brush the cut side of each peach half lightly with olive oil to prevent sticking. This step also enhances the flavor during grilling.

Grill the Peaches: Place the peaches cut-side down on the grill. Grill for 3-4 minutes, or until grill marks appear and the peaches are slightly softened. Flip them over and grill for an additional 2-3 minutes if desired. Remove from the grill and set aside to cool slightly.

Assemble the Salad: In a large bowl, combine the mixed greens with the grilled peaches cut-side up. Tear the burrata roughly into pieces and place atop the salad.

Dress the Salad: Drizzle the balsamic glaze and extra-virgin olive oil over the salad. Season with salt and freshly cracked black pepper.

Add the Finishing Touches: Sprinkle the toasted walnuts and torn basil leaves on top for added crunch and flavor.

Serve Immediately: Toss gently to combine if you prefer, or serve as is for visual appeal. Enjoy your delicious grilled peach and burrata salad while fresh!
