1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

Juice and zest of 2 lemons

2 tablespoons honey

2 tablespoons poppy seeds

3 cloves garlic, minced

1 teaspoon Dijon mustard

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, finely chopped (for garnish)

Marinate the Chicken: In a large bowl, whisk together the olive oil, lemon juice, lemon zest, honey, poppy seeds, minced garlic, Dijon mustard, salt, and black pepper. Add the chicken pieces to the marinade, ensuring they are well-coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for enhanced flavor.

    Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, preheat it on the stovetop over medium-high heat as well.

      Skewer the Chicken: Thread the marinated chicken pieces onto skewers, leaving a little space between each piece to ensure even cooking. If using wooden skewers, soak them in water for 30 minutes prior to prevent burning.

        Grill the Chicken Bites: Place the skewers on the grill. Cook for about 3-4 minutes on each side or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
