2 boneless, skinless chicken breasts

4 cups cubed seedless watermelon

2 cups arugula or mixed greens

1/2 cup feta cheese, crumbled

1/4 cup red onion, thinly sliced

1/4 cup fresh mint leaves, chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Salt and pepper to taste

Marinate the Chicken: In a bowl, whisk together 2 tablespoons of olive oil, salt, and pepper. Coat the chicken breasts in the mixture and let them marinate for at least 30 minutes.

    Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium heat on the stove.

      Grill the Chicken: Place the marinated chicken breasts on the grill. Cook for 6-7 minutes on one side. Flip and cook for an additional 6-7 minutes, or until the internal temperature reaches 165°F (75°C). Remove the chicken from the grill and let it rest.

        Prepare the Dressing: In a small bowl, whisk together the remaining olive oil, balsamic vinegar, honey, salt, and pepper until well combined.

          Assemble the Salad: In a large salad bowl, combine the arugula (or mixed greens), cubed watermelon, feta cheese, red onion, and mint leaves.

            Slice the Chicken: Once the chicken has rested, slice it into strips.

              Toss the Salad: Drizzle the dressing over the salad mixture and gently toss to combine. Add the grilled chicken strips on top.
