Grilled Chicken Pineapple Quesadilla

Ingredients
  

2 boneless, skinless chicken breasts

1 cup fresh pineapple, diced

1 red bell pepper, sliced

1 small red onion, thinly sliced

1 cup shredded pepper jack cheese

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken breasts with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Marinate for at least 30 minutes to enhance the flavors.

    Grill the Chicken: Preheat your grill over medium heat. Grill the marinated chicken for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F). Remove from the grill and allow to rest for a few minutes before slicing into strips.

      Sauté the Vegetables: In a skillet over medium heat, add a bit of olive oil. Once hot, add the sliced bell pepper and onion. Sauté for about 5 minutes, or until they are softened and slightly caramelized. Stir in the diced pineapple and cook for an additional 2-3 minutes until warmed through. Remove from heat.

        Assemble the Quesadilla: Lay one tortilla flat on a clean surface. On half of the tortilla, layer some grilled chicken, sautéed vegetables with pineapple, and sprinkle with shredded pepper jack cheese. Fold the tortilla over to create a half-moon shape. Repeat with the remaining tortillas.

          Grill the Quesadilla: Wipe the skillet clean and heat it over medium heat. Place the folded quesadilla in the skillet and cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted.

            Serve: Remove from the skillet and cut each quesadilla into wedges. Garnish with fresh cilantro and serve with lime wedges on the side.
